Prime bay leaves come from the dried leaves of the evergreen tree, Laurus nobilis. The elliptically shaped leaves are light green in color and brittle when dried. They have a distinctively strong, aromatic, spicy flavor. Bay leaves is the approved term for this spice, but the name "laurel" is still sometimes used.
Prime bay leaves add to the flavor and appearance of your soups, stews, stocks, marinades, grilled chicken, and meat dishes. Mediterranean, French, Moroccan, and Turkish cuisines use bay leaves in spice blends such as bouquet garni, biryani, and curry blends. Bay leaves are also popular in Thai dishes, including massaman curry. For best use, crinkle the leaves just before cooking to release the flavor.
