Providing maximum versatility in your establishment, this base is perfect for making milk-based gelato, and its neutral taste makes it easy to create an endless number of menu flavors. It blends well with both liquid and powder flavorings - try using any of Fabbri's Delipaste or flavoring powder products as desired to bring authentic Italian flavor to your sweet treats!
This base is designed for making a gelato base using the hot process method prior to freezing. The hot process method of gelato-making requires the use of a pasteurizer to create a microbiologically safe mixture, which in turn gives the finished product a longer shelf life than when using the cold process method. This method is ideal for operators looking to offer gelato as a main menu item or sell gelato for retail.
To prepare, mix with milk, sugar, heavy cream, skim milk powder, and dextrose. Add the mixture into your pasteurizer and run the production cycle. Once pasteurized, combine the base with the Fabbri Delipaste flavoring of choice and mix for approximately 3-5 minutes. Add the mixture into your batch freezer and blend with Fabbrisoff emulsifier, if desired, to improve the consistency of the finished product. Follow your equipment's specific instructions to prepare the batch. Once the finished product is extracted from your batch freezer and placed into your serving pan, blast freeze for 30 minutes before displaying in your serving cabinet.
